Thai Soy Sauces, a primer 🇹🇭

Six types :

(1) Thin = Lighter than Japanese/Chinese*

(2) Mushroom = A unique to Thai cuisine secret weapon ie a light/thin soy sauce, with extra unami. Totally different to Chinese mushroom soy, which which is rich/heavy

(3) Golden Mountain = A soy-based seasoning sauce unique to Thai cuisine, invented in 1954

(4) Black = Richer and viscous, for coloring. Again, different to Chinese/Japanese/Korean 'dark' soys.

(5) Sweet = Dark soy (above) + molasses. Very similar to Indonesian 'Kecap Manis' soy sauce

(6) Soybean paste = used in some Chinese influenced thai recipes

Last week, had sichuan stirfry egg noodles with veggies
This week, egg and gailan fried rice with sichuan pepper chicken & mixed veg!

Food is my love language and friend treated me to these while visiting 😊

Online, I try to avoid performative controversy. I post to start conversations, not win arguments. I like thoughtful interaction and hearing how different people see things. Expect curiosity, questions, and the occasional “what do you reckon?” post.

#FediCollective brew build 3 officially ended, but a handful of us stuck around for another 90 mins for an unexpected #foodie chat.

Getting to know people's diverse backgrounds—like finding out one of our cybersec folx used to be a chef and is part Persian—was awesome.

My biggest #TIL from the extension:

The Kimchi Cult😂. The observation was that some people are really pushy about getting others to eat kimchi, even if they don't like it.

That pressure to love one thing is intense! I like radish kimchi but dont' eat it often and I think people should be gentle-sharing over aggressive promoting.

Just goes to show you how much of life is about #community and finding those small, surprising things that bring joy. Thanks to everyone who hung out! ❤️

1. Made shrimp & veggie japchae at home for dad’s birthday meal 🍤
2. Gave lizard a bath coz he made a mess so needed cleaning (rinsed him after this pic was taken)
3. Had lots of pears from family friend’s tree so poached them in cinnamon butter, vanilla, brown sugar for dessert 🍐
4. Friend learned sourdough bread making, gave me this beautiful boule last night
