Mee goreng mamak, Malaysian style aromatic noodles with velveted pork, shrimp, fried mini tofu, bok choi, and bean sprouts.



Spicy, savory, so tasty and easy to put together. Not the neatest serving but, with all the aroma in the kitchen, we were dying to dig in.



VELVETING JUICE FOR PORK:

— 1 egg white;

— 1/2 tsp baking soda;

— 2 tsp cornstarch;

— 3 tsp Shaoxing wine;

— 3 tsp soy sauce.



THE SAUCE:

— 1 Tbsp chopped Thai dragon peppers;

— 1 Tbsp chopped garlic;

— 1 Tbsp light soy sauce;

— 2 Tbsp dark soy sauce;

— 1 tsp shrimp paste.



GARNISH:

— fried shallots;

— chopped celery leaves;

— chopped cilantro.

#Homemade #Flute

How to make an elderberry flute:

1. Take your loppers out to trim sycamore branches;
2. Decide to cut the elderberry that’s been growing at the sycamore’s base;
3. Notice the elderberry’s pithy center;
4. Remember that 40 years ago you had planned to make an elderberry flute;
5. Make the flute patterned after an inexpensive quena (“KEH-na”) bought in Mexico.

The flute makes a sweet sound. A sample coming soon🙂

The sound is achieved by air forced across the sharp beveled surface at the end of the notch.  I used a rat-tail file and my notch is very similar to the one on the quena.

#Umami fusion #food celebration: because I finished clearing my closet (donated clothes & shoes this weekend).

1. Marinated some chicken thighs and cooked it for dinner with homemade #kimchi rice

2. Ground pork with green peas and green onions (had this for lunch 3 days ago). Eaten with steamed rice (not pictured).

3. Store-bought unagi (eel teriyaki) on Monday. Served family style with homemade sushi rice and nori (dried seaweed), again not pictured
