So just to prove vegans don't subsist entirely on expensive steak substitutes 😂, here's tonight's dinner, stir fry with Cufu (pumpkin seed tofu, https://www.turnbullscufu.co.uk/). I realise this isn't the best example of vegan food not having to be expensive because that is considerably more expensive than soy tofu, but I promise we eat a lot of beans too and I'll post next time I make some.

I've been trying some pumpkin recipes this year to make use of all the pumpkins we grew. So far, this soup is a new favourite.
400-500g pumpkin
1/2 yellow onion
1-2 cloves of garlic
100ml chicken stock
100ml oat milk (or any other type of milk)
1 tbsp celery
Salt
Black pepper
Just cook it all down until soft and then blend smooth. Done.
Topped with:
Heavy cream or sour cream
Paprika powder
Toasted pumpkin seeds
For the toasted pumpkin seeds, I washed and dried the seeds, let a pan get ripping hot, and then toasted them quickly under constant movement. A small amount of fat (peanut oil in this case) in the pan to finish helps salt stick to the seeds if desired.

*Banana oat cake*
2 1/2 cups oat
3 eggs
3 very ripe bananas (1 to slice on top)
1/2 cup neutral oil (used sunflower oil)
3/4 cup sugar (used brown sugar)
1 teaspoon vanilla extract
1 teaspoon baking powder
1 pinch of salt
3 eggs in an oiled silicone bowl seasoned to taste in the microwave at 60% power for 2 min 22 sec

Cob loaf. 500g flour, 2tsp ea {yeast, salt, sugar}, 1tbsp olive oil, 1/2 cup powdered milk. 1.25 cups warm water.
Mix warm water, yeast, salt sugar and 1/4 cup flour in a jug. Leave at least 15min. Overnight if you like for a pre-ferment (it’s called a Biga, sort of sourdough-lite). Put flour, milk powder and olive oil in a stand mixer. Add fermented yeast liquid and mix with a dough hook for 10 mins. You might need to add up to 100ml more water to get a slightly sticky dough.
Oil a large bowl and turn out into bowl to rise. The dough will double or more so choose a bigger bowl than that one. Cover with cling film. Leave 1hr at least. Two wouldn’t hurt. An air fryer on 40c will speed up the rise if yours isn’t broken like mine, what the heck does “E3” mean on an Aldi air fryer, anyway?
After rising time, preheat oven to 200C while you turn the dough out onto a floured surface and fold it a few times like you know what you’re doing and as if this will make any difference. Put it in a Dutch oven (a large covered oven dish, I use an aussie cast-iron “camp oven”). If you have two Dutch ovens, go double dutch—double the quantities and make two loaves. (Le crueset enameled iron pots are good for this too). Slash the dough three or four times with a razor or your sharpest knife. You should sharpen that knife more often, eh? Sprinkle it with something. Dukkah, Sesame seeds, herbs, wotevs. I used Nigella seeds here. Leave to re-rise 15-20 min while the oven heats up.
When the oven is hot, cover and bake 20 mins. Remove cover, rotate the pot 180º and bake another 20-30 mins. Look for a hollow sound when you knock the top of the loaf, if it doesn’t look and feel divine, give it another ten.
Remove, allow to cool in pot for as long as you can resist slathering it with butter. #Recipe #StressBaking

Pad Prik King Recipe (Thai Red Curry Stir-Fry)
Made tonight with these ingredients , pretty much this recipe, delicious, can highly recommend in every way - I used 300g chicken breast, and 2 tbspns Mae Ploy local brand red curry paste

Bonus hack: Try not to burn it again with the baking soda in it.

My modified version of the peanut sauce recipe:
Put 1/2 cup peanut butter in a bowl. Add 1/2 cup boiling hot water. Stir to combine. Add 1 clove minced garlic, 2 T sugar, 2 T soy sauce, 1 T vinegar. Stir some more. Optional adds: chopped cilantro, cayene pepper or chilli oil, and salt, to taste. (I didn't add any of these, I was going for simple as possible)
* This comes out thin enough to pour; if you want it thicker add less hot water. Just titrate til you got the consistence you want.
Oven baked hot(ish) wings
Recipe:
Kilo of chicken wings
Marinade:
Juice of three limes
2 tablespoons olive oil
(1 teaspoon pomegranate syrup) optional
1 teaspoon crushed chilli peppers (different varieties will yield different heat)
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon cumin seed
1/4 teaspoon fenugreek
1/4 teaspoon turmeric
Put chili, cumin, fenugreek, through a spice grinder.
Combine with other marinade ingredients and marinate 20 minutes to 24 hrs.
