Boil three packs of udon two minutes and save a cup of the water. In the pot: three tablespoons white miso, three of butter, two grated garlic cloves, a splash of soy. Whisk the noodle water in until it goes glossy. Fold the spinach through, return the noodles, crown each bowl with a soft egg.
The starch in that saved water is the whole trick — it's what turns miso and butter into a sauce instead of a puddle. Nobody sold you that. A cook figured it out and told somebody.
