Does anyone have a potato alternative (no-nightshades) #latkes recipe they like or think looks promising? Ideally something more savory than sweet potato?

My partner is having a super stressful week, and I’d like to do something small even if we’re not doing a ton for Hanukkah*. Our early dates involved making latkes, so it can maybe involve an anniversary* card with art of those memories if I do it tmrw? 💕
