Using this tutorial to add the Sonoff Zigbee dongle. https://smarthomescene.com/guides/how-to-passthrough-usb-devices-to-home-assistant-in-proxmox/ I turned off the HA VM, plugged in the USB thing, then in hardware for the HA VM I added the dongle using "USB Vendor / Device ID".

Next, in HA, I opened (sometung?) and I found things that HA had auto-discovered, including the printer, NAS, chromecast. In there was also the Zigbee dongle. So I clicked "ADD" and then said "automatic" for how to set up. Now it says it found "CC2652 Texas Instruments" Actually that's the chip inside the Zigbee dongle perhaps? Whatever.

Now all I need is a zigbee device, so I'll probably buy a temp sensor.

Oh crap I have my zigby dongle buried amid other electronic and powere cables, which is a great way to cause interference. See this guide: https://www.home-assistant.io/integrations/zha/#zigbee-interference-avoidance-and-network-rangecoverage-optimization But Zigbee sounds like it's a pain :/

I ordered a zigbee outdoor temperature sensor from sonoff (SNZB-02WD IP65 Zigbee LCD Smart Temperature Humidity Sensor), just so I had something to play with.

Urgh after a reboot the Zigbee dongle doesn't seem to be recognized anymore, or it fails to initialize or something. Going for a full system reboot to see if that changes anything.

Did a full system reboot, but still the same problem with the zigbee dongle. I may have to go back to the post I found on setting up USB in proxmox for HA devices and try to go through it again.
