One of the best soups I've ever eaten is this spinach soup I made using discount baby spinach from my corner store. I also learned how to make a vegan butter and flour thing that I have no idea what is called in English (it's called "browning the flour" in Finnish I guess, and my German friend told me it's "sweaty flour" in German) - great success, in any case.
Last week I got a half a kilo bag of discount baby spinach from another store (it literally cost me cents then as well) and I made a lot of tofu paneer with that, which was excellent as well.
Would be nice to grow my own spinach sometime. I tried in spring, slugs ate my harvest pretty quickly. Probably requires boxing and elevating the beds a little, I'd guess.
