@markc568 nice. Basically, this:
Fry tofu in advance. Don’t season it much if at all. You don’t it to impose itself. Set it aside.
1. Heat onions/bells in oil
2. Add red curry paste and peanut butter and cook a little
3. Add coconut milk, sugar, soy sauce, potatoes, and peanuts, and cook until potatoes are done
4. Add broccoli and cook only a few minutes
5. Add in the tofu to warm it up
That’s pretty much it.
Update: forgot the peanuts!
