Please, are there any #middleeasternfood people in my follows? Or do you know any good Middle Eastern cooks? I am trying to make fatayer with sourdough, and they are delicious but tough. What am I doing wrong?
Latest version was pretty good. A sourdough enriched with a beaten egg, a spoonful of greek yogurt & a swig of mild flavoured oil. Dough balls flattened with oiled hands rather than rolled out on a floured benchtop. Filling of silverbeet, red onion, garlic, lemon juice, sumac, allspice, salt & pepper, sauteed just enough to dry it off, baked fast in a hot oven. Another few goes before I write up a recipe, but I think it is possible to make good sourdough fatayer. #sourdough #middleeasternfood
