Vanessa Bateman, one of the book's editors, now informs me that the cover features "an anonymous European red deer being transported from the Southern Alps of New Zealand by helicopter for the venison industry, c. 1970s. The photographer, Bryan Bassett-Smith has lots of harrowing stories involving tranquilizers, deer, helicopters"
