Lots of Indian onion and garlic free recipes will include #asafoetida (aka hing) as it adds onion-like complexity to dishes if used in moderation and correctly. Overused it will be bitter.
You probably won't find it in your supermarket, so check out your local Indian grocery.
It is not only used for onion/garlic free dishes but can also be used with garlic and onion to enhance their flavours.
