Following on from the previous post in this thread about Indian recipes without onions or garlic ....

Lots of Indian onion and garlic free recipes will include #asafoetida (aka hing) as it adds onion-like complexity to dishes if used in moderation and correctly. Overused it will be bitter.

You probably won't find it in your supermarket, so check out your local Indian grocery.

It is not only used for onion/garlic free dishes but can also be used with garlic and onion to enhance their flavours.

Priya Krishna, author of Indianish, writes about how to use it, and its essential use in Indian cooking. NOTE HER POINT ABOUT ITS AROMA. I double-bag the container and keep it away from other food.

About a week ago I made some suggestions in response to a question, for replacing onions/garlic in recipes:

"You can sub in ginger or galangal for garlic, a bit of black pepper for chilli and something with a bite - capers fore example, or something pickled, for onions. It won't be the same but will add interest and flavour.

Or if you want that mellowed, cooked-down slightly sweet onion flavour then a mirepoix would do, or just carrots and capsicum."

This morning I was reading in #PlantBasedIndia by #DrSheilShukla that he suggests fennel or cabbage (both good choices imo), but he says that time is the key when sauteeing the veg to get the rich and complex flavours that you want. (Yes, agree.)

If your #asafoetida ain't ponging, it is no longer fresh, or it has been cut with a lot of other ingredients. Replace it.
