Also harvested a second batch of coffee fruit. I removed the peels but not fast enough, they started to mold and I tossed them in the compost. Now air drying on my garden beds. Used Lalvin D47 yeast this time and much happier about the goop removal. These can more easily be peeled by hand than first batch.
First batch is not do easy to peel. Ale yeast did not break down the peel on the outside of the seed (endocarp?). This is where last year's batch went wrong, I probably can still fix those by peeling them now. Very labor intensive. I am about to go do something else. #coffee
Breakthrough!!! Put the coffee in a cotton bag, pounded the bag on the sidewalk and hit it with a rolling pin, used a dryer with no heat to separate chaff! Only a few left without separation from chaff! Enough to roast some coffee finally. Figuring out this process has not been easy, the commercial processing steps (specialized equipment, giant batches) are not directly transferable to small scale production. #coffee #homegrowncoffee
