It used to be that somebody who ate well would describe a meal by the dish: coq au vin, sole meunière, steak and kidney pudding, pasta alla puttanesca. Today we seem describe every meal by its macronutrient: 40 grams of protein, some carbs, a little fat. The descent from cuisine into nutritional accounting happened inside twenty years.

not I. the other night I cooked a dish mom made first in 1967. When she put it on the table along with a plate of cornbread squares, Papa famously asked, "Do we eat it now, or have we already?" Cuz, it looked like vomit. It became one of our go to meals when camping in Colorado. 3/4 cup of shredded cheddar; can of Cream of Mushroom soup; a 15 oz can of Veg-All (liquid drained off); a can of Corned Beef-Libbey's is best. Jiffy corn bread goes underneath it. Papa named in Garp. Love it

@Daojoan another device to decouple people from one of the most important aspects of life: food. Macronutrients are produced by industries. Dishes and recepies are cultural and part of being human.
