@SRLevine @Canageek @jacel @WizardOfDocs Minor additional note: in BC that basic cheese section would have six kinds of cheddar not two, which I am only now considering might be a bit extra
@beandreams @Canageek @jacel @WizardOfDocs most basic cheese sections here have three: mild, medium, & sharp, but grocery outlet is a kind of weird place and things aren't always consistent
what else do you have to get six?

Our basic cheddar section has 3 sizes of each of these:
marble
mild
medium
old
extra old
extra old (white)
@beandreams @SRLevine @Canageek @jacel plus low fat versions of some of them, and these days also lactose free
I still don't understand how you take the lactose out of milk and still have it taste remotely like milk
@WizardOfDocs @beandreams @Canageek @jacel it's not removed, it's converted to it's component sugars and I don't think the level of sweetness changes all that much from lactose to glucose + galactose
(the split is because they just dump in a bunch of lactase, which is the same enzyme you can take in pill form if you're lactose intolerant, it's pretty cool that it works under a wide range of conditions)
