When a book says release date 5th may, what time zone? Will it become available at midnight local time for whoever's purchasing it?

Traditionally in the US at least, they're shipped to bookstores in advance, and go on sale that day. For blockbuster releases sometimes stores will do an "open at midnight" gimmick.

in my experience, it varies by platform
If I remember correctly, it's usually available by midnight EST (GMT -5), not sure about other time zones.
