A friend gave me a chunk of squash from an enormous one she couldn’t finish. I don’t know what variety (now need to find out) but when roasted it was sweet and tasted like chestnut. So I pureed it and made spiced muffins with a maple glaze. I think this is how I’d like to eat all my squash now!

A photo of 10 (there were 12) muffins on a wooden countertop. The muffins are in parchment paper tulip cases so not much cake showing but the muffins are orange coloured. There’s a crudely swirled dollop of cream coloured frosting on top of each.
