A tragedy in two acts:

I just cooked the best broccoli 🥦 of my life.
It had all the good stuff: guanciale, garlic 🧄, eggs(mostly yolks), parmesan, anchovy sauce, MSG…

It was SO GOOD even my picky 6 year old loved it! That’s HUGE.

But it was all by eye — I have NO idea what proportions I used so I can never recreate it 😭😭😭

@leaverou my congratulations for the successful broccoli, and sympathies for unknown recipe!
I’ve many times wished I had a webcam over my stove for this exact reason..

@leaverou sounds like an umami party! Personally I like roasting broccoli until it gets a bit crispy on the florets. And also, eating more of the stems - it feels like most people cut too much good stuff away

@benschwarz absolutely an umami party! I may not have a sweet tooth but I *definitely* have an umami tooth haha.

I find that roasting dries it out. Try a deep pan! Broccoli is amazing for soaking up any liquid goodness. Just put the lid on for 2 minutes to steam it so that the stalks soften.

I like the tops more because they soak up more flavor but like you, my daughter liked the stems better too so next time we’re getting it whole to have more stem!
