@TheBreadmonkey it's a bit unconventional, but hear me out ...
You could make potato gnocchi (mash potato mixed with flour to form dough, rolled into shapes and boiled) with a curry sauce. Carrot puree can be used as a base for curry paste instead of tomato. The onion, parsnips, and sprouts can be added to the sauce or served on the side (char grilled is best)

Sprout are perfect just lightly boiled, wiv salt an' pepper and whatever you use as a butter substitute.

@TheBreadmonkey parboil the potatoes, chop & fry all the veg gently so they don't brown or burn, until quite soft. In batches if necessary. (basically a mirepoix https://en.wikipedia.org/wiki/Mirepoix ). Perhaps steam the brussels sprouts separately. If you have any garlic or other suitable herbs they would go well in it too. Then make up a saucepan of gravy and serve the veg with that.

@TheBreadmonkey The potatoes, onions, parsnips and carrots would make a fantastic "mash". Ideally lathered with yummy butter or a vegan alternative.
So all you'll need then are the "bangers". As a meat eater I would of course go for good German style meaty ones, but if you're vegetarian look for one of those.
Put some honey and a small dash of either a mild vinegar or a bit of lemon juice, salt, a small dash of olive oil on sprouts. Boil/steam in as little water as possible. Serve as aside.

@TheBreadmonkey prefacing by saying this is a complete faff, but lean into the Stranger Things theme and go 80s Americana-style finger food: potatoes and parsnips and carrots into fries-type-things, onions into onion rings, sprouts, um, probably roast, but then stick 'em on cocktail sticks. Provide much ketchup and "ranch" (whatever that is) and some kind of melted cheesy something and hummus and salsa and guac, to dip them all into. Arrange in the shape of a demogorgon.
Christmas wedges.... par boil some potatoes cut into large wedges.
Season and roast in the oven along with some carrots and parsnips... until nice and crispy, cook up some diced bacon and sausages... wrap the sausages in bacon and slice after if you prefer... make some stuffing. Fry of some diced onion.
Assemble in a bowl and smother in a nice gravy.
Pot pie with creamy sauce (parsnips, potatoes, carrots and onion, plus chickpeas, and green peas if you have some in the freezer).
Brussels sprouts salad: shred them, toss with a sweet mustard dressing, and top with toasted nuts.
The curries people have suggested sound good too.

@TheBreadmonkey roast veggies with spices. Just chop up smallish, oil, cumin or garam masala, chilli. Bake. I'd normally do it as a side to something else. Might be a bit dry on its own?
