My process for deciding what to cook would give any organized event planner a heart attack
1. Go to the fancy butcher, see what catches my eye
2. Make up a dry rub
3. Realize paprika in the already-applied dry rub will burn when I sear it
4. Find a good looking recipe while googling what to do about that
5. The dry rub is being repurposed to turn the sous vide bag liquid into the base for a glaze
Result: 4 hours after shopping and 1 hour after seasoning I finally know what I’m making
