Switched my phone to grayscale a couple of weeks ago and love how much chiller it makes so many apps and pages. Saves a lot of battery too.

@michaelcoyote On android (or at least pixel) there's "Color correction" under the accessibility settings. You can set to greyscale (or other/manual color changes), and add a shortcut to switch it on and off.
