They have a texture similar to pulled pork because they're so fatty. In fact I think I shredded some up once with sauteed onion and Baby Ray's, and put them in a bun with cheddar.

I've been mucking about with smoking turkey legs over the past few weeks (hot summer in the UK).
Don't get me wrong, by no means have I mastered it - but as an alternative to pork/ham, it's damn good.
(I'm slightly bewildered that a whole turkey is stupid expensive, and yet a 1 kg leg is really cheap)
