Sooo if I wanted an affordable, small power bank just for charging my phone when camping and the like, that DOESN'T have a habit of catching on fire, what brands should I be looking at?

Echoing, the suggestions of anchor also make a small portable solar panel that you can use to charge phones and batteries with
(The other day I was pleased to note that the firefighters that I see on regular basis we’re also using anchor products)
@idzie It might be overkill for your case, but I've had my eye on Midland's emergency radios that also double as a powerbank and a flashlight. The 300 series can be charged with a hand-crank and with solar power besides the usual USB charging, which I think makes it nice for things like camping when you might not have access to a power socket easily, and it's built "rugged" so it can handle being knocked around more in a bag. Belkin might also have some options that work well for you that are cheaper.
