Right, a couple of dishes with beans.
Beans seem to be a staple of BBQ cooking, whether as a cold salad or a hot side.
Here, I've got two different versions:
The first, "Cowboy Caviar", is a cold salad, and reasonably easy to make - just pour everything into a bowl, add the dressing, and mix it up. A lot of recipes use chopped tomatoes, but I've skipped it for ease, and also, I'm a bit fussy with tomatoes. For this, I've also used canned beans, rather than dried and soaked, again for ease, and to show something that can be pulled together quickly and without *loads* of effort.
The second, "Cowboy Beans", is basically the same as Boston Beans - I've made loads of different cooked bean recipes over the past few years, mostly Mexican-inspired, but this is "sorta" close to baked beans, with a sweet-and-sour flavour. I've used bacon, but this would be entirely optional if you wished to make it vegetarian, and likewise sub vegetable stock instead of chicken stock. Here I used dried beans, soaked overnight, which means it's a quite a long cook once it's prepped.
