You probably won't get good coffee. All Germans travel to Italy to get their delicious espresso or cappuccino 🙂. What you need to try though is a 'Fischbrötchen' (fish sandwich)

My sister and her husband are coffee lovers, especially of Italian coffee, and they enjoy the coffee in the Speicherstadt Kaffeerösterei. The Speicherstadt is well worth a visit too, as others have already pointed out.
For breakfast, definitely get a Franzbrötchen, it's similar to a cinnamon bun. Rumkugeln are also a Northern German specialty, Allwörden bakery has very good ones, just be aware that they have a strong rum aroma.

Take a walk through the Speicherstadt and see the Elbphilharmonie, there are several good coffee places around.
If you get a day pass for public transport, you can also take the Elbe ferries to get a great view.
Or you could rent a bike from one of the many Stadtrad rental stations and take a scenic tour around the Außenalster, most of the streets around it are designated bicycle streets.

Blanco has a few stores and good coffee, so dora Copenhagen Coffee Lab, Elbgold do their own roasts and have decent coffee but on the hipster side. Brühwerk is also serving decent coffee. In general Germans do not really appreciate good coffee, but due to the Harbour and heavy import traditions, Hamburg is a bit of an exception. In the Speicherstadt (cultural heritage side in Hamburg) there are a lot of roasters. You can give them a try. Feel free to share your verdict :)
@_elena Wishing you an amazing trip! Hamburg can be very impressive with the right weather. And don’t believe all the coffee myths. As a matter of fact, Germany is the biggest coffee importer on the planet while it grows no single bean on its own. And guess what the coffee planter in Costa Rica told me a few years ago? They send their coffee to Hamburg to have it de-caffeinated and then sent back to Central America. That’s how little Germans understand about coffee. 🤡
@_elena hmm, I'd say eat a "fischbrötchen" or/and if you are vegeatrian or vegan don't miss Franzbrötchen (a kind of cinnamon roll HH is famous for up here)

If you want to see a traditional German café and like real hand make cakes etc, and have enough time, go to Konditorei Lindtner in Eppendorf.(https://www.lindtner.com/de/gastronomie/konditorei-lindtner).
It is wonderful, if you like old, polished wood, good service, excellent tea (if you want to try the variety with kluntje and cream). But expensive, of course, but most will be. The area is nice and it is easy to go there by bus or underground (which is above ground a lot in Hamburg).

They roast their own coffee, have a variety of espressi and the location is beautiful and interesting. The Speicherstadt belongs to the United Nations cultural heritage. The coffee will taste German, though. As the Germans prefer it differently to Italians, but it is good nevertheless.
