Which brings me to ask : does anyone know a way i could install a possibly more lightweight, less google-bloated version of android on a crappy phone from 5 years ago that isnt a google pixel or whatever?

It depends on the smartphone's make and model...
There are chances you can easily flash a Xiaomi/Redmi/Poco that is still on MIUI system (HyperOS is almost locked), OnePlus or Samsung
I strictly refuse to buy a new phone when the one i have isnt broken, just slow
