Most companies I’ve seen only use basic aspects of azure/AWS/office for their products, a lot of the lockin is imaginary.
With money, pain tolerance, code, documentation and qualified ‘old-school’ admins most of what I’ve seen in my career could be running to a pragmatic level somewhere else within a month, if shit hits the fan.

(Some projects in financial industries would be a massive pain because of certification issues and I have no idea about similar institutions.)
