Any of Tomm Moore's movies (Secret of Kells, Song of the Sea, Wolfwalkers)
All of them are masterpieces of style, animation, history, and myth. Every single shot is a visual gem, and the stories are incredible. I can't sing his praises enough.
Aside from that, The Last Unicorn was beautiful, and The Flight of Dragons with James Earl Jones as the dark wizard Omidon was a childhood favorite of mine.
Finally, I just rediscovered the movie Gulliver's Travels from 1939! It was a gorgeously shot and executed movie with nice music and incredible animation sequences. I remember pretending to re-enact the scene where they tie up the sleeping giant with my dad when I was three.
