There's something so funny to me, that we tend to celebrate chefs, who have access to the best food in the world. I mean, if you're serving me A5 beef, truffles, French handmade cheese, and the finest organic veggies available, then you'd have to be a real fuck up to make this bad. And there's nothing wrong with enjoying a meal like this occasionally, but there's something so much more interesting, in people who were given very little and still made something delicious, that has stayed with us. Enslaved people making delicious healthy Potlicker out of discarded bones and greens, poor Cajun-Creole making a beans and rice into a masterpiece, Irish, making potatoes 100+ ways, because it's what they had. If you can make something delicious out of dollars store food, that is just more impressive to me.
