Very few things are more satisfying than slicing a whole ripe pineapple with a Chinese cleaver, then eating the cubes or slices in dark sticky soy sauce with birds’ eye chillies. Maybe some belacan.

Ive been having difficulty procuring the right type of dark sticky soy sauce here. Most dark soy sauce here is HK style, and more salty and thin rather than thick and umami with slight sweetness. The Thai and Filipino ones aren’t quite right either. The viscosity is also wrong. Anyway, that is why I have a constant supply of kicap mules
