Update. Ontario Health got back to me:

Updated COVID-19 vaccines will be available starting the week of September 22nd for priority populations, including people 65 years and older, health care professionals (including students), people with underlying health conditions and young children. Eligibility will open up to the general population starting October 27th.

Eligible populations for priority access (starting next week) will also include: 

Residents in long-term care homes and other congregate living settings
Individuals from First Nations, Métis and Inuit communities
Members of underserved communities
Health care workers and other providers in facilities and community settings as per National Advisory Committee on Immunization (NACI) guidelines.
