I'd encourage both cooks and community-oriented people to plant a little cilantro if they can. (If planted in a pot, make it a fairly sturdy one. They can get 2-3' tall when they go to seed.)

Let them go to seed. Pollinators love the flowers.

When pollinated, the petals drop off like snow, and the seeds swell up. Each plant makes dozens and dozens of seeds, which you can cook with (cilantro leaf & coriander seed), or seed-share with neighbors.

Easily re-seeds itself.
