I think I have a new favorite snack. I don't treat myself to bananas very often but I did the other day. Experimented with this today:
- 1 cup of rice, freshly cooked but cooled a bit
- 1 banana
- 2 tbsp of peanut butter
- 1 tbsp maple syrup or 2-3 tsp sugar
- 1/8 tsp salt
- 1/8 cup water

Put it in a decently powerful blender for 30-40 seconds for some pretty great pudding. Might be kinda ice-creamy if put in a freezer for awhile?

A healthy enough snack or even a meal.

Reminds me of one of my favorite recipes. I really need to make it again:

Oatmeal Banana Cookies

  • 2 bananas
  • 1 cup oatmeal
  • 1/3 cup chopped walnuts
  • A hearty dash of cinnamon

Makes one tray. Multiply ingredients to make more

1) Pre-heat oven to 350掳F
2) Smoosh ripe bananas with a masher or pestle, fork not recommended
3) Add a lot of cinnamon and mix
4) Chop up walnuts and mix into banana & cinnamon mixture
5) Slowly add oatmeal and mix very well
5a) Recommended to use a 2:1 or 3:1 mixture of whole/old-fashioned oats and instant oats. Instant oats gives density and smoothness, old-fashioned oats gives chunkiness. Only old-fashioned yields cookies that aren't very cohesive (but still quite good). Only instant oats yields very dense cookies lacking in texture
6) Spoon out cookies onto lightly buttered parchment paper on cookie sheet(s)
7) Bake around 13 minutes
