I did it by country/region and then by milk type and cheese (technique/style) type (and later by science)
I'm not sure if it was because I learned about this one early on, or it's just that terrific but still a heavy favorite is Tallegio 馃い
A while since we had any, so picked some up yesterday when I saw it at the cheese store
