the relay.fedi.buzz lets you follow @tag-<hashtag>@relay.fedi.buzz.

I made a separate bot user on my #gotosocial and follow every hashtag I have even a mild interest in. That gets the posts on my instance of gotosocial. Then I follow/unfollow hashtags directly in my regular account (this one).
