@caten Ah so I misread your post, I thought you could literally "use" an unmentioned overleaf alternative 🙃

Yes, I am with you. But the first step for me was to get people off of Google Docs for collaborative writing, so a self-hosted Overleaf (pretty dumbed down, nothing compared to overleaf.com, no AI etc.) is a good start and people know the UI already.

I would very much like a git(annex)-backed stupid simple webinterface that regularly runs latexmk to build. Basically Overleaf though 😅

Not solving the issue, but if you're collaborating with researchers based in France, you can use such an Overleaf community edition hosted by #CNRS, dubbed #PLMLatex.

I'd be interested to know whether other unis/research orgs around the world have dont the same. Even #CERN is referring to the proprietary #Overleaf#SAAS.
