On Android:
Select Google Assistant instead of Gemini because Gemini can't be uninstalled or disabled. Which is malicious. Old Androids got an automatic "upgrade".
Then you can go Settings > Apps and disable Google Assistant.
Also do not use Android email for non-gmail, because you are giving all the credentials to Google and using their server. Instead install a 3rd part email app such as k-9/Thunderbird.
Only use gmail/outlook/hotmail etc as a backup email for your providers.
