There's a different type of potato salad that tastes even better which is basically potatoes and vinaigrette dressing, which I prefer personally but even so, it does seem that potatoes + a condiment of some form = salad somehow...
@Alice Oh, that reminds me - I bought a bag of tiny potatoes yesterday. Tossing them in the air fryer and then tossing them with some mayo sounds like an excellent idea. And healthy, because it's "salad."
