I'm in something like 13 different #Slack communities, mostly for various #journalist groups.
Lots of discussion in many about ICE.
Discussions about leaving slack due its ties to #Salesforce, who are supporting ICE?
Nothing.
People use Discord and Slack for different reasons.
If you want to create an alternative — the place to start is NOT E2EE (end to end encryption).
A place to start is understanding all these different types of users and use-cases. And then deciding which of these user types you are making the software for.
Some of them need E2EE, but some do not.

My impression is that for most communities it's an alternative for web forums, not for IM or IRC. So for these folks, Lemmy, Discourse or nodeBB might be a more helpful suggestion than XMPP or Matrix.
I noticed this back when Slack pulled their bait-and-switch by turning off their IRC and XMPP bridges, and wrote up a page of replacement options;

I like how people are recommending a bunch of FLOSS messengers now, its an opportunity to check out underrated projects like I just a few minutes ago learned about the FLOSS project Quiet (https://tryquiet.org) from a discord community trying to relocate.
The website says its all E2EE P2P with tor built in, channels like slack/discord, no email or phone number required. Unfortunately no quantum resistant encryption on the roadmap so I still would recommend SimpleX for general purpose instant messaging but Tor-by-default and P2P are genuine advantages over Simplex

Now for some discord alternatives.
#Slack: proprietary and close source. cant self host. and free version limits messages
#Stoat (Revolt). This one is interesting. Its basically a clone of Discord. While you can self host. The client being taken from Discord is hard coded with a server. So you must fork and publish your own version of the Apps to use your own server. otherwise no different than just sticking with Discord. (data on stoat's servers instead of discords.)

Here I have to confess that I myself never got the hang of Slack. I always felt overwhelmed. So I feel completely unqualified for judging alternatives 🤪
I'm old, I am pretty much out of teammy orgs and their tools.
I remember that #Slack was good for agreeing on which bar we were going to gather at.
