@Alice @toonie Milkshake IPAs and their dark counterpart Pastry Stouts aren't very well liked among the professional tasting community, not to mention I steer clear of anything *obviously* (key word) not vegan as a vegan, but I'm not going to get in the way of any beer drinker's happiness!
You'll want to steer clear of any West Coast IPA if you want to reduce your chances of encountering dankness, which is something I like despite being averse to actual pot. If you're open to exploring, an IPA made with a refreshingly fruity New Zealand hop such as Nelson Sauvin (the most common to find by name), Riwaka, or Motueka might be it. Hazy IPAs, while generally more approachable to the casual beer drinker, are such a crapshoot for me because many of them are dry hopped to the point of setting your tongue on fire, and often defeat the purpose of what I feel an IPA is, a dry, cleanly bitter celebration of hop flavor and aroma. Admittedly, this is me being a bit of an inflexible purist, but my certifications kind of require me to be one. ^^;

@toonie @Alice Read this after buying beer, lol. There *are* plenty of good ones if they're your thing, but they need to come from breweries that actually give a shit about balance and not excess. Found myself gravitating towards SmASh IPAs recently, because there's nowhere to hide and requires some guts and a lot of trial and error from the brewer to craft a good one.
And they just *have* to be fresh. I'll spend an inordinate amount of time looking at packaging dates in the store to make sure what I buy is in its prime.
As far as market dominance goes, this is what I hate, because demand stifles style exploration and the diversity I crave...and not everything I cook pairs with an IPA.
Speaking of the UK, I could really use an English IPA about now, but they're extraordinarily rare for American brewers to produce. Bitters and Dark Milds are almost more common now. The latter are always brewed too strong, but I admire the effort at least.
